Because what’s the good of an Irishman’s Wife, if she doesn’t have a good, hearty slow-cooked Irish Stew recipe up her sleeve? A cold weather and  St. Patrick’s Day staple.

Let’s get started!

Brown the lamb in a little oil in a cast iron pot. Set lamb aside.

Saute the leek and garlic until softened. Add the beef back into the pot.

Add all remaining ingredients except dutch carrots and potatoes. Slow cook in the oven for 2.5 hours.

Add Dutch carrots and baby potatoes. Return to the oven for a further 30 minutes or until cooked. Season & serve!

Make sure your liquid is between 95 degrees F and 115 degrees F when adding to yeast.
