THE IRISHMAN'S WIFE
– 90g rice bubbles – 40g shredded coconut – 140g glace pineapple – 150g glace red cherries – 70g dried cranberries – 100g pistachios – 600g white chocolate
1. Line a slice pan with baking paper,. Give it a light coating of baking spray. 2. Roughly chop up all the fruit and nuts. Pop into a large bowl. 3. Add the rice bubbles and mix. 4. In a separate bowl, melt your white chocolate.. Pour over the rice bubble mixture and give it all a really good stir. 5. Spread the mixture into the prepared pan and lightly press all over to get into all the corners and even out the top. Pop in the fridge for 2 hours. 6. Slice and eat!
