Roasted Balsamic Beetroot  and Carrot Salad

Roasted root vegetables, on a bed of lentils and labneh, with a drizzle of balsamic vinegar... sign me up! PS, don't forget the bread to mop up the last of the labneh - it's the best part!

 3  carrots 3 beetroots 2 tbsp extra virgin olive oil + extra to drizzle  sea salt flakes 3 beetrootund black pepper 1/3 c green lentils 1 tbsp balsamic + extra to drizzle 175g labneh a handful of fresh mint and flat-leaf parsley 2 tsp dukkah
