Irish  Colcannon Mash

Emma Lee

Is there anything more comforting than mashed potato? Especially creamy mash with other bits in it? For me, Colcannon is king when it comes to Irish potato dishes.

Let’s get started!

Warm the milk and bay leaf in a saucepan while the potatoes are cooking. Discard the bay leaf once milk is warm and pop the milk aside.

01.

In a large pot, cook the potatoes in water until fork tender. Drain and mash with butter and warm milk.

02

Saute the greens in butter, and season with salt and pepper.

03

Add the sauteed vegetables to the mashed potato. Season with salt and pepper if needed. Serve with a big bowl of Irish Stew!

04

Make sure your liquid is between 95 degrees F and 115 degrees F when adding to yeast.
