Description
An Australian Christmas staple. A medley of pistachios, glace fruit, cranberries, and rice bubbles encased in a white chocolate slab of festiveness!
Ingredients
Scale
- 40g shredded coconut
- 140g glace pineapple
- 150g glace cherries
- 70g dried cranberries
- 100g pistachios
- 90g rice bubbles
- 600g white chocolate
Instructions
- Line a slice pan with baking paper, ensuring the paper goes well above the top of all the sides. Give it a light coating of baking spray. Set aside
- Roughly chop up all the fruit and nuts. Pop them into a large bowl along with the coconut
- Add the rice bubbles and mix thoroughly.
- In a separate bowl, melt your white chocolate either over a pot of simmering water or in the microwave. When completely melted, pour over the rice bubble mixture and give it all a really good stir to completely coat the fruit, nuts and rice bubbles.
- Spread the mixture into the prepared pan and lightly press all over to get into all the corners and even out the top. Pop in the fridge for 2 hours.
- Slice and eat!
Notes
