White Christmas Slice

Description

An Australian Christmas staple. A medley of pistachios, glace fruit, cranberries, and rice bubbles encased in a white chocolate slab of festiveness!


Ingredients

Scale
  • 40g shredded coconut
  • 140g glace pineapple
  • 150g glace cherries
  • 70g dried cranberries
  • 100g pistachios
  • 90g rice bubbles
  • 600g white chocolate

Instructions

  1. Line a slice pan with baking paper, ensuring the paper goes well above the top of all the sides. Give it a light coating of baking spray. Set aside
  2. Roughly chop up all the fruit and nuts. Pop them into a large bowl along with the coconut
  3. Add the rice bubbles and mix thoroughly.
  4. In a separate bowl, melt your white chocolate either over a pot of simmering water or in the microwave. When completely melted, pour over the rice bubble mixture and give it all a really good stir to completely coat the fruit, nuts and rice bubbles.
  5. Spread the mixture into the prepared pan and lightly press all over to get into all the corners and even out the top. Pop in the fridge for 2 hours.
  6. Slice and eat!

Notes

For this White Christmas recipe, I used my biscotti pan lined with parchment paper. (Its dimensions are 30.5 x 14 x 5.1cm)
