Description

Full of warm spices, apple flavors, and pecan crumble topping, this delicious, and easy applesauce bread makes a great breakfast or perfect afternoon snack!

Ingredients

Scale

Bread Batter

  • 130g unsalted butter
  • 100g white sugar
  • 100g brown sugar
  • 250g jar of apple sauce
  • 2 eggs
  • 1 ½ tsp vanilla extract
  • 1 ½ tsp baking powder
  • 1 tsp sea salt flakes
  • 1 tsp ground cinnamon
  • ½ tsp ground ginger
  • ¼ tsp ground cloves
  • 200g plain, all-purpose flour
  • ½ c buttermilk
  • 80g pecans, roughly chopped

Crumble Topping

  • 60g plain, all-purpose flour
  • 50g brown sugar
  • ¼ tsp ground cinnamon
  • 40g unsalted butter, melted
  • ¼ tsp vanilla extract
  • 20g pecans, roughly chopped

Instructions

  1. Preheat the oven to 180 degrees Celsius.
  2. Melt the butter.
  3. In a large mixing bowl combine the melted butter and the sugars. Give it a quick mix to combine and add the apple sauce. Stir through.
  4. Add the eggs and vanilla extract, and using a whisk, gently incorporate them into the wet mixture.
  5. Add the baking powder, a teaspoon of sea salt, and half of the flour. Continue using the whisk to gently mix to combine.
  6. Add half of the buttermilk, then the remaining flour, then the remaining buttermilk, stirring through after each addition.
  7. Add the chopped pecans and gently fold in.
  8. Pour the batter into the prepared pan and set aside.
  9. In a small separate bowl, combine the crumble dry ingredients. Give it a quick mix with a fork.
  10. Add the melted butter and, using the fork, combine until mixed through and you get a crumble consistency.
  11. Crumble the crumb topping on top of the batter in the loaf pan and pop into the preheated oven for 55 minutes.
  12. The loaf is cooked when a cake tester is inserted and comes out clean.

Notes

  • I cool this easy applesauce bread recipe in my 21cm x 11cm loaf pan, greased with butter and lined with parchment paper.
  • When mixing each ingredient into the batter, be sure to gently mix until just combined and no more. To get a nice, dense moist quick bread, we want to incorporate as little air into the mixture as possible.
