White Chocolate Rocky Road

Let’s finish the year in style, shall we?! Here’s my easy-to-make creamy white chocolate rocky road. It’s a great throw-together no-bake dessert to have on hand over the festive season. No scratch that, make it anytime or all the time. It’s a cracker!

It’s super quick to throw together. I’m talking about prep and mix in under 5 minutes!

A good rocky road recipe is ALWAYS a good idea and a welcome plate at most social gatherings. I mean, ARE there actually people who don’t like rocky road? Never met one! 😉

No baking required here! Perfect for those hot days when you don’t want to turn on the oven to make something delicious. I love a no-bake slice, don’t you?!

What you need to get started

  • Shredded coconut. You could also substitute desiccated coconut for shredded, I just prefer the look of shredded.

  • Flavored jubes or fruit-flavored jellies. I use The Natural Confectionary Co’s Fruit Salad Jellies for this recipe and they work perfectly. They are also some of the best-tasting jubes on the market!

  • Marshmallows – When I’m making rocky road, large marshmallows are my go-to. These ones were big pink and white ones. While I’m team white marshmallows all the way normally, I wanted a bit more color in this rocky road so pink and white marshmallows won over.

  • Slithered pistachios and almonds – if you can get your hands on slithered pistachios, their vibrant green color just makes any dish pop! This doesn’t change the flavors and you can use slithered or roughly chopped pistachios and still get the same result. I have used a mixture of both slithered pistachios and slithered almonds in the recipe, however, feel free to use just one or both types of nuts.
  • Good quality White chocolate – I use Lindt white chocolate for this recipe.

  • Dried flowers to decorate (optional) – The Essential Ingredient Salade de Fleurs is a pantry staple for me. They are the most delicate mix of cornflower, rose, and marigold petals that I sprinkle on everything from Eton mess to White Christmas.

Variations/Substitutions

Making your own rocky road is a great excuse to play with your favorite flavors. I mix up my rocky road recipes depending on the season. Go nuts and experiment! Here’s a few of my go-to’s…

Dried fruit – I love adding dried or glace fruit to my baking. Dried cranberries are always a good idea in white chocolate rocky road.

Turkish Delight / Honeycomb / Lollies

Not a fan of white chocolate? Swap it out for milk chocolate, dark chocolate, or even ruby chocolate.

Freeze-dried berries impart so much flavor and make a delicious treat in rocky road.

Equipment

You’ll need a large mixing bowl, a microwave-safe bowl for the chocolate, and a metal spoon. A slice tray to form the slice into is also essential. For this rocky road recipe, I used my biscotti pan lined with baking paper. (Its dimensions are 30.5 x 14 x 5.1cm)

The details

  1. Line a slice pan with baking paper, ensuring the paper goes well above the top of all the sides. Give it a light coating of baking spray. Set aside.


  2. In a large mixing bowl, combine the marshmallows, jubes, shredded coconut, and nuts. Give it a quick mix and set aside.


  3. In a separate, heatproof bowl, melt your white chocolate either over a pot of simmering water (double boiler method) on low heat or in the microwave in 20-30 second bursts. When completely melted, pour the melted chocolate over the marshmallow mixture and give it all a really good stir to completely coat all the ingredients


  4. Spread the chocolate mixture evenly into the prepared slice tin. Wait 60 seconds for the chocolate to start to set at room temperature and then sprinkle the dried flowers on top. Pop in the fridge for at least 2 hours until the chocolate has set completely.


  5. Cut into small pieces and eat!

A little word on melting chocolate

While I always recommend tempering your chocolate, this easy recipe doesn’t require you to (woohoo!) Pop it into a heat-proof bowl and nuke it in the microwave in 20-second increments (stirring in between with a metal or silicon spoon) until your chocolate is glossy and fully melted.

Cooks Notes

To cut chocolate squares… Dip your sharp knife in hot water for a minute or two. Wipe dry with a clean cloth. The hot knife will then easily and cleanly cut the rocky road. If your knife cools, repeat the process again.

Storage

Slice up the rocky road into chunks and pop it into an airtight container. Pop it back in the fridge until needed. It lasts a good 5 days in the fridge, although to be honest, it never lasts that long in our house. Damn fairies!
