There’s something about a cast-iron Dutch oven slowly bubbling away in the oven that makes a house feel instantly cozy. Whether it’s a rich beef ragu, a pot of Irish stew, or a loaf of homemade soda bread, enamel cast iron holds heat beautifully and turns simple ingredients into the kind of dinners everyone drools over.

A Dutch oven is also one of the most versatile pots in my kitchen. You can sear, braise, roast, simmer, and bake all in the one pot, which is exactly why these cast-iron Dutch oven recipes are on high rotation around here during the cooler months.

A quick note on cooking with enameled cast iron

One of the biggest mistakes I see people make with enamel cast iron cookware is cooking too hot. A good Dutch oven holds heat so well that medium heat is usually plenty.
 
For slow cooking, braising, and soups, lower temperatures help prevent sticking and protect the enamel finish over time. I also always let my pot heat gradually rather than shocking it with high heat. And ALWAYS add oil to your pot before turning on the heat!
