Especially over the colder months, a bowl of slow-cooked something served up with a side of colcannon is serious heartwarming stuff. Ps. If you haven’t yet made a pot of creamy, Irish colcannon potatoes, you are in for a treat! Colcannon is a traditional Irish dish of creamy mashed potatoes, green, spring onions, cabbage, and plenty of butter. It’s the perfect side dish to so many main meals, however, it just shines alongside a big bowl of Irish Stew and a slice of soda bread. Don’t save this one for St Patrick’s Day though, It’s a great potato dish to serve up all year round!
