What To Serve With Corned Beef – 12 Delicious Side Dishes!

There is nothing like the smell of corned beef (or silverside depending on where you live!). It’s one of the Irishman’s favorite dinners, and lucky for him, I never need an excuse to make it for dinner. Corned beef is one of those childhood dinners that my mum always made. And growing up on a farm, there was never a short supply of beef in the freezer!

An easy Dutch oven corned beef is super easy to make and bonus, there is usually enough for a second night or lunches for the next few days. And don’t forget ALL the sides. Whether you are keeping it simple with mashed potatoes, boiled cabbage, and peas, or serving it up cold the next day with some salad and homemade bread, I’m all in!

Anyway, let’s get started. Here are my go-to corned beef side dishes…

Nothing screams the long days of Summer quite like a Caprese salad. Layers of heirloom tomatoes, fresh mozzarella, and basil leaves. This simple salad is a perfect addition to any bbq. A total crowd-pleaser and quick to assemble. It’s a win-win!

Colcannon Mash – Irish Mashed Potatoes

Is there anything more comforting than mashed potato? Especially creamy mash with other bits in it? For me, Colcannon is king when it comes to Irish potato dishes.

I hope you found some ideas for your next corned beef dinner! A piece of corned beef simmered until it’s perfectly juicy and cooked through is such a treat. Personally, I’m all in with a side of colcannon, marrowfat peas, and lots of cheesy white sauce to go alongside a slice of silverside. I’m drooling just thinking about it!

Let me know in the comments how you serve up your corned beef.

Enjoy!
