Boozy Bailey’s Irish Cream Hot Chocolate

It’s full of good ingredients, real chocolate and it’s super easy. We’re talking 5 minutes to a from-scratch, homemade, creamy hot chocolate with a good hint of booze. No sign of a store-bought hot chocolate mix in sight.
A spiked mug of hot chocolate… It’s a mum’s late night after the kids go to bed dream! Go on, you deserve it!
What you need to get started
- Whole milk – while you could substitute for light or skim milk, your hot chocolate will not be as creamy and indulgent as when you use full cream milk.
- 70% Dark couverture chocolate. I’ve used both Lindt and Callebaut when I’ve made this recipe. If a dark hot chocolate doesn’t float your boat, you could always try using a bittersweet chocolate around 54%, or milk chocolate. Good quality couverture can make or break this recipe. Lindt is easy to find in most supermarkets.
- Golden castor sugar
- Baileys Liqueur. I’m using the original Baileys Irish cream liqueur, however, you could also try one of their flavored baileys liqueurs (salted caramel comes to mind), Kahlua or Tia Maria depending on your preferences.
- White marshmallows. Why white ones? Because I think the pink ones aren’t as good! It’s a thing ok!
- Heavy cream that can be whisked. Homemade whipped cream trumps anything store-bought. To whip, place a small amount of pure cream in a bowl and whisk until soft peaks form.
- Chocolate shavings (to sprinkle) I use a vegetable peeler to shave a little extra chocolate off a Lindt chocolate block. It makes the perfect topping. You could also dust with a little hot chocolate powder through a sieve.
How to make this boozy Irish cream hot chocolate recipe
- In a small saucepan, combine 100ml of the milk and the chocolate. Warm on low-medium heat stirring continuously until the chocolate has melted.
- Add the remaining milk and sugar and stir in. Heat until the mixture is 60-65 degrees Celsius.
- Remove from the heat and add the splash of Baileys. Give it a quick stir and pour it into your serving glass/your favorite mug.
- Top with whipped cream, marshmallows and sprinkle with chocolate flakes.
- Sit back and enjoy!
Equipment
Here’s what you need to make an Irish hot chocolate. A small saucepan and a whisk! If I’m looking to take this up a notch, I use my milk frother to aerate the milk and make it even creamier.
Cook’s Notes
While I’ve made this recipe for one Mumma who likes a late-night boozy beverage by the fire (yep that’s me!), you can easily double, triple, or quadruple this recipe for more. Have guests? Try making a bulk batch of this homemade hot chocolate in a crockpot and set up a station of spirits, toppings, and infusions for people to experiment with. Think chocolate or caramel sauce, a dusting of cinnamon, crushed-up chocolate bars or if it’s the festive season and you are hosting holiday gatherings, mini gingerbread or candy canes are a fab idea!
While you can store leftovers, I generally don’t recommend it. Make this Baileys hot chocolate recipe fresh to order and enjoy.

- 60g Lindt 70% dark couverture chocolate
- 1 tbsp golden castor sugar
- 30ml Baileys Irish cream liqueur
- white marshmallows
- lightly whipped cream
- roughly chopped chocolate (for finishing)
Instructions
- In a small saucepan, combine 100ml of the milk and the chocolate. Warm on a low heat stirring continuously until the chocolate has melted.
- Add the remaining milk and sugar and stir in. Heat until the mixture is 60-65 degrees celcius.
- Remove from the heat and add the Bailey’s. Give it a quick stir and pour into your serving glass / mug.
- Top with whipped cream, marshmallows and dust with a little drinking chocolate.
- Sit back and enjoy!
