5 Super Easy Skillet Bread Recipes To Bake This Weekend!

I’m having a moment with easy skillet bread recipes. Fresh bread cooked in a cast iron skillet until golden brown and then sliced for dunking in a homemade soup is a cracking weekend supper.  

We generally have a from-scratch soup on the stove most weekends, whether it’s a warm-up lunch after Saturday morning sport, or a cozy (and easy) Sunday night supper, there is always soup! A slice of homemade bread alongside is a bonus and very much depends on family commitments.  And while for a long time, I would have baked a beautiful, fresh loaf of just-out-of-the-oven sourdough, lately I’ve scrapped that to make way for quick breads that require some active dry yeast, a quick dough rise, and popped into a cast iron pan or Dutch oven to bake.

Here is my grown-up version of pizza scrolls.  It’s my favorite toastie combination, caramelized onion, ham, and cheese, in parmesan and black pepper dough, rolled and baked to cheesy perfection!

Homemade bread from scratch is just the BEST, isn’t it? This cast iron skillet focaccia bread is super easy to make, with very little resting time. It’s delicious slathered with butter (or drizzled with olive oil) and dunked in roast pumpkin soup.

Frequently asked questions about skillet bread

How do I prepare the skillet before baking? 
Butter is your best friend when it comes to greasing cookware. I don’t recommend extra virgin olive oil as it can make pans sticky and leave a residue making foods stick. With some recipes, (and well-seasoned cookware), a little all-purpose flour in the bottom of the pan is all you need

What is the best size cast iron skillet in which to bake bread?
There is no best size. I cook my skillet bread in pans that range from 8-inch to 12-inch skillet

How do I store leftovers?
Once the bread is at room temperature, store it in an airtight container or wrapped in plastic wrap. While most quickbreads are best eaten on the day. Generally, a quick reheat in the oven or toaster can easily stretch out the shelf life for a day or two.
